Meet the Food Trucks: Chicken on the Road

Part two of a series featuring three of the mobile food trucks that park in Malden Center.

Augusta Subs and Salads, a Billerica staple for almost 27 years, has found its way to Malden. 

“It’s been surprisingly fun to go to a different city, a different town, and find people who either used to live in Billerica or used to work in Billerica but now live in Malden, and they recognize us right away,” said owner Mary Bishop.

Augusta’s Chicken on the Road mobile food truck allows Augusta to take its most popular product, chicken cutlets, to other towns. The truck began its first full season this year.

Bishop said a lot of Malden residents have told her they used to visit Augusta in Billerica for years and are glad they have a chance to easily taste the shop’s food again.

“We don’t deliver. We never felt like delivery was a good thing for our product,” Bishop said. “With our food truck, we’re taking our food where people want it to be, and it’s fresh and right there.”

Bishop said although building a strong clientele base through the Malden food truck program is still a work in progress, she’s been able to make connections there to work upcoming charity events. 

Chicken on the Road will be at the Forever 9 Jimmy Fund Tournament in Melrose on August 3.

“The great thing about a food truck is that you can spread your word about what you do and help people at the same time,” Bishop said.

Chicken on the Road is in Malden Center on Wednesday at 5:30 p.m. with Cupcake City, but schedules vary. You can view the menu here.
